Sourdough Peanut Butter Banana Muffins

Oh, so tender and sweet, these jumbo sourdough peanut butter banana muffins are made with very ripe bananas, sourdough discard and smooth peanut butter.

My poor neglected sourdough starter has been sitting in the refrigerator for almost six months, just hanging out and hanging on. It had very little hooch on top so I took that as a good sign.

I fed it up without discarding a couple of times and it responded well until finally, I took some out to make these muffins. While the discard doesn’t help with the rise, it surely adds moisture, giving the muffins a lovely texture. 

Sourdough Peanut Butter Banana Muffins

You can use fed or unfed sourdough starter for these muffins though unfed will give them more sourdough flavor. This recipe makes nine jumbo muffins.

Ingredients
2 cups or 250g flour
½ cup, firmly packed, or 100g brown sugar 
½ cup or 100g sugar 
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon fine sea salt
½ teaspoon baking soda
⅔ cup or 150g very ripe banana (peels were brown and speckled)
2 large eggs
½ cup or 113g melted, cooled butter
½ cup or 125g sourdough discard 
¼ cup or 60ml milk
¼ cup, rounded, or 80g smooth peanut butter (with sugar)
1 teaspoon vanilla extract

Method
Preheat your oven to 350°F or 180°C and line a large muffin pan with jumbo paper liners. 

In a large mixing bowl, whisk together the flour, brown sugar, sugar, baking powder, cinnamon, salt and baking soda. 


In another bowl, mash the bananas with a fork and add the eggs and mix.


Add in the butter, sourdough discard, milk, peanut butter and vanilla extract and whisk until smooth. 


Add the wet ingredients to the bowl with the dry ingredients and use a rubber spatula to fold together until just combined.


Divide the batter between your muffin cups. 


Bake for 25-30 minutes in the preheated oven or until a toothpick comes out clean and the muffins are golden brown. 


Remove from the oven and leave to cool for a few minutes on a wire rack. Transfer the muffins to the wire rack. 


These can be eaten warm or cold. Either way, they go great with a cup of coffee in the morning or a cup of tea in the afternoon.

Banana Peanut Butter Cookies

Simple to make, chewy and delicious, these banana peanut butter cookies are perfect with a glass of cold milk or a cup of hot tea. They'd be great for breakfast too!

I give the actual recipe I used for the cookies in my photos but I have made these many times. What I discovered is that no banana is exactly the same weight you need. 

Based on the original ingredients for one batch of 16, here are the instructions to personalize the recipe according to the weight of your bananas. You need a kitchen scale. 

Simply peel your very ripe bananas and weigh them in grams. Divide the number of grams by 75. Now times that result by 160. That is how many grams of peanut butter you need for your weight of bananas. Times that banana number by 31 to figure out how much flour you need. Easy! 

Banana Peanut Butter Cookies

I tried this recipe with natural peanut butter without sugar and even with a very ripe banana, the cookies just weren’t sweet enough. Use your favorite peanut butter that does have sugar added. I like Jif.

Ingredients for 16 cookies
1/3 cup or 75g very ripe banana
1/2 cup, rounded, or 160g smooth peanut butter (with sugar)
1/4 cup or 31g flour
Powdered sugar for pressing with fork
Sugar for sprinkling, if desired.

Method
Preheat your oven to 350° or 180°C and line a baking pan with a silicone liner or baking parchment. 

In a mixing bowl, whisk the ripe banana until smooth. 


Add in the peanut butter and flour and mix thoroughly. 


Use tablespoon to apportion into cookies. 


Roll into balls.


Dip the tines of your fork into powdered sugar and press down in a cross pattern. 


Sprinkle with more sugar for decoration, if desired.


Bake in your preheated oven for 8-10 minutes or until golden brown. 


Remove the cookies from the oven and leave to cool. Transfer to a wire rack to cool completely before storing in an airtight container.

Peanut Butter Chocolate Chip Muffins - Small Batch #MuffinMonday

This month’s Muffin Monday snuck up on me! I could have sworn there was one more after Thanksgiving. Turns out that I wasn’t the only one!

So after a lot of scurrying around and possibly some panic baking, we have five SIX delicious muffin recipes to share with you today. This one is mine. 

Peanut Butter Chocolate Chip Muffins

This recipe makes six normal sized muffins, chock full of chocolate chips and peanut butter. I use Jif Extra Crunchy because it’s my favorite. I topped the muffins with mini chocolate chips before baking because I ran out of the regular ones. 

Ingredients
2 tablepoons plain whole milk yogurt
1/3 cup or 80ml milk
1 cup or 125g all-purpose flour
1/2 cup, packed, or 100g dark brown sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup or 83g crunchy peanut butter
1 tablespoon butter, softened, plus more for greasing the pan and the chips
1 large egg, at room temperature
3oz or 85g semi-sweet chocolate chips, plus extra for decoration, if desired

Method
Preheat your oven to 350°F or 180°C. Prepare your six-cup muffin pan by greasing it with butter or lining it with muffin cups. 

Measure the milk into a measuring cup and stir the yogurt into it. Set aside.


In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda and salt. 


Put just a dap or two of butter in the chocolate chips and rub them with your clean hands to separate the chips that are stuck together. Add the buttery chips to the dry ingredient mixture and toss to coat. 


In another mixing bowl, whisk the butter, peanut butter, milk/yogurt and egg.


Add the wet ingredients to the dry and fold until almost completely combined. You might still see a little flour. 


Spoon or scoop the thick batter into your prepared muffin pan. Top with extra chocolate chips, if desired.


Bake in the preheated oven for about 20-25 minutes or until a wooden skewer comes out clean.

Cool in the pan on a wire rack for about five minutes then transfer the muffins to the wire rack to cool completely before plating up to serve.

Regular readers will notice from the photos that I am not in my usual kitchen. But such is my dedication to Muffin Monday that in my suitcase I packed the disposable muffins cups, flour, and baking powder just so I could bake these muffins. And a spatula. Also two sharp knives and my little knife sharpener, but those had nothing to do with these peanut butter muffins!

I love staying in Airbnbs because of the kitchen but often they are ill equipped, with the most common missing items being a decent knife and a non-stick pan. I get it. Casual renters can ruin good knives and scratch non-stick pans but, dang, those would really elevate my cooking experience. I draw the line at packing pans (for a flight – road trips maybe!) but I often do bring one or two good knives in my checked bag. 

Is there something you travel with when you know you’ll have a kitchen to cook in? I'd love to hear what it is.

Peanut Butter Muffins with Peanut Butter Streusel 

This recipe makes 8 regular sized muffins. To make the streusel, it is essential that the peanut butter be well chilled so you can make crumbles. Since this is an unusual number of muffins, you might want to follow my lead and use a flat baking pan and disposable muffin cups, like these Reynolds brand foil baking cups. They are foil outside with a paper muffin cup inside so they don’t need the support of a muffin pan. Back when I was baking large quantities of cupcakes and muffins for my daughters' school fundraisers, these were a godsend. 

Ingredients
For the muffins:
3/4 cup or 94g flour
1/2 cup or 100g sugar
3/4 teaspoon baking powder
1/4 teaspoon fine sea salt
1/3 cup or 80g smooth peanut butter (I use reduced fat Jif)
1/2 cup or 120ml milk
1 egg 
1/2 teaspoon vanilla

For the streusel:
¼ cup or 32g all-purpose flour
2 tablespoons or 25g sugar 
3 tablespoons or 45g creamy peanut butter, well chilled 

Method
Preheat your oven to 350°F or 180°C and prepare your muffin pan by greasing it or lining it with paper muffin cups. 
Make the streusel by combining the ingredients in a small bowl and using a pastry blender or the tines of a fork to mix them lightly to create crumbles. Put the bowl in the fridge until you are ready to use the streusel. 


In a large bowl, whisk together the flour, sugar, baking powder and salt. 


In another bowl, whisk together the peanut butter, milk, egg and vanilla. 


Fold the wet ingredients into the dry ones until just combined. 


Divide the batter between your 8 muffin cups.


Top with the streusel. 


Bake in the preheated oven for 20-25 minutes or until the muffins are golden and a toothpick inserted in the middle comes out clean.


Remove from the oven and cool on a wire rack, if you have one! My little kitchen did not.

Mini Peanut Butter Cup Muffins #MuffinMonday

These mini peanut butter cup muffins are full of peanut butter flavor and are studded with mini peanut butter cups inside and out.

I usually do most of the grocery shopping in our family because I enjoy it. I actually like choosing the produce and browsing the aisles for ingredients that say “Dinner!” to me. We have a shared note on our iPhones so that everyone can add items or untick the little circle (which makes that item jump to the top of the list) so that I know exactly what to buy on my weekly shopping trip. 

A number of weeks ago, my daughter added rice cakes to the list. Unsalted rice cakes. Low salt, low sodium and lightly salted were all options in my usual grocery stores but no unsalted. Who knew they would be so tricky to find? 

I finally ended up at a store called Sprouts Farmers Market and found not just one brand of unsalted rice cakes but three! Yay! I celebrated my good fortune by browsing the shop to see what other great things they might sell and found the tiniest little peanut butter cups in the bulk section. Perfect for snacking and muffin baking.

Sprouts is also the only store where I have been able to find the pearl onions I need for my homemade pub-style pickled onion recipe. I really should shop there more often. 

Mini Peanut Butter Cup Muffins

This recipe makes six normal sized muffins. It's easily doubled to make a batch of 12. If you don’t have mini peanut butter cups, by all means substitute chocolate chips. Chocolate and peanut butter are such a great muffin combo so you need to get some chocolate in there!

Ingredients
1 1/4 cups or 156g flour 
1/4 cup or 50g sugar
1 1/4 teaspoon baking powder
1/4 teaspoon salt
1/3 cup or 95g creamy peanut butter
1 large egg
1/2 cup or 120ml whole milk
1 teaspoon vanilla extract
1/2 cup or 100g mini peanut butter cups 

Method
Preheat your oven to 350°F or 180°C and prepare your six-muffin pan by greasing it or lining it with paper liners.

In a large mixing bowl, combine all of your dry ingredients: the flour, sugar, baking powder and salt.


In a smaller mixing bowl, add all of your wet ingredients, the creamy peanut butter, egg, milk and vanilla extract.


Use a whisk to break up the peanut butter and continue mixing until the whole mess is homogeneous.  That is to say, smooth and of the same consistency throughout.

Pour your wet ingredients into your dry ones.


Fold them together gently. If there is still a bit of flour showing, that is good.

Fold in most of the tiny peanut butter cups in, saving some to decorate the tops. 


Divide the batter between your prepared muffin cups. Decorate with the reserved peanut butter cups. You might want to push them in a bit more than I did so they don't slide down the muffins so much while baking.

Bake for 20-25 minutes or until a toothpick comes out clean.

After allowing them to cool for a few minutes, remove the muffins from the pan and place on a wire rack to finish cooling.
