Ballymaloe Potted Shrimp

A traditional Irish starter, this Ballymaloe potted shrimp recipe is from the Ballymaloe Restaurant cookbook, updated by Irish cooking teacher and doyenne Darina Allen. Flavored with garlic and lemon juice, this Irish recipe is fresh and so tasty.

Unlike English potted shrimp, the Irish version doesn't have nutmeg which makes this my favorite potted shrimp. Not that I don't like nutmeg but I've always kind of thought it weird with shrimp. The Irish also use Atlantic shrimp instead of the Morecambe Bay brown shrimp typical in English potted shrimp. I used wild caught cold water shrimp which I thought might be close to the Irish ones. 


When Myrtle Allen opened Ballymaloe Restaurant in East Cork back in 1964, it was a revolutionary place, serving delicious recipes using only local seasonal ingredients. It would not be an understatement to say that Ballymaloe changed Irish food culture with that emphasis. 

Her daughter-in-law, Darina Allen, a chef in her own right, continued Myrtle’s legacy and expanded her reach when, along with her brother, she opened the Ballymaloe Cookery School in 1983. Darina is also a leader in the Slow Food Movement in Ireland. 

Darina's own daughter-in-law Rachel Allen is a well-known food writer, cookbook author and tv chef as well as also teaching at the Ballymaloe Cookery School. I'm pretty sure when you search "Irish chef," photos of the Allen family appear near the top of the list!

Ballymaloe Potted Shrimp

Darina says that this amount serves four as a first course – and it is rich because of the clarified butter - but two of us polished this off in no time. I anticipated that, as you can see, by only putting it in two little pots. If I were indeed serving four, I'd double the amounts. Although the recipe is originally from the Ballymaloe Cookbook, Darina also shared it online, in a tribute to Keith Floyd

Ingredients
1 small clove garlic
1/4 teaspoon fine sea salt
2 oz or 56g clarified butter or ghee, with extra as needed
1 teaspoon fresh thyme leaves (plus tender sprigs to garnish, if desired)
freshly ground black pepper
4 oz or 110g (about 1 cup) shelled, cooked salad shrimp
2 teaspoons fresh lemon juice

Method
Use the side of a wide knife to crush the garlic into a paste with the salt. I hit the garlic clove once then added the salt, which makes it easier to crush. 


Bring the clarified butter to a low boil along with the thyme leaves, crushed garlic and a couple of grinds of black pepper. 


Add the shrimp and toss for about 30 seconds. Set aside to rest. Season with a little more salt, if necessary and add the lemon juice. Stir to combine.

 
Pack the shrimp into little pots and pour over the clarified butter. 


Melt a little more ghee as need to just about cover the shrimp. Finish each pot with the tender end of a fresh thyme sprig. 


Put the pots into the refrigerator and leave to set. Potted shrimp will keep in the refrigerated for three or four days so they are a great make-ahead starter for dinner parties.



Remove the little pots from the refrigerator and leave to come to room temperature before serving with sourdough bread or sliced baguette.

Bacon Potato Silver Dollar Pancakes #BreadBakers

Happy Valentine's Day! We don't really celebrate the holiday by doing anything special but we do like to open a good bottle of wine and enjoy a tasty meal at home. If you don't know what to serve your special someone, these silver dollar pancakes would be great as an appetizer topped with a slice of goat cheese and a sprinkle more of green onion.

Bacon Potato Silver Dollar Pancakes

I cheat for these and use the pre-cooked real bacon crumbles from Costco. I fry them a little bit more and drain on paper towels to get rid of more bacon fat. According to the interwebs, one half cup of bacon crumbles is the result of frying 8 slices of regular (not thick cut) bacon.

Ingredients for about 27 silver dollar pancakes
1/2 cup or 60g cooked smoked bacon, chopped in bits
1 cup or 125g flour
1/2 teaspoon fine sea salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Fresh black pepper
1/2 cup or 120ml sour cream
1/2 cup or 120ml milk
1 large egg
Rounded 3/4 cup or 200g leftover mashed potatoes 
1/4 oz or 7g green onions, plus more to serve, if desired

Method
Combine the flour, salt, sugar, baking powder, baking soda and a few generous grinds of fresh black pepper in a large mixing bowl. Add in the crispy bacon and stir well.


Whisk the mashed potato, egg, sour cream and milk together in a smaller mixing bowl.  


Now fold the wet ingredients into the dry ingredients. Add the green onion tops and fold again.


Lightly grease your griddle by brushing it with a little oil or bacon fat.

Spoon batter onto the griddle to make 5-6 little pancakes. You could fit more on there but then they'd be a challenge to turn over. 


When they have browned on one side, turn them over with a spatula to brown on the other. This takes just a few minutes over a medium flame.


Remove to a plate and keep warm as you cook the rest of the pancake batter in similar batches. 


We ate these plain and they were delicious just like that but the goat’s cheese circles added a great punch of flavor, served with a glass of crisp rosé.

Smoked Mussel Tapenade

We’ve been spoiled this year from mid-August through mid-November because, staying in the Channel Islands, the most delightful mussels cooked with garlic and cream are available at many restaurants. The island’s own farmed stocks were much depleted by an invasion of spider crabs (Who knew that spider crabs are a natural predator for mussels? Not me!) but the Scottish mussels substituted were wonderful. 

We are back in Houston now and while there are fresh mussels nearby, they are a larger variety than we are fond of. We like ‘em small, truth be told. 

So, for this month’s Fish Friday Foodies challenge with mussels as the main ingredient, I decided to go a different direction and use canned ones. I found a few recipes online that were easily adaptable and sounded tasty. And then I went to three supermarkets and couldn’t find smoked mussels in any of them. 

Trader Joe’s to the rescue! An internet search – which I admit I should have done in the first place – said that Trader Joe’s has smoked mussels so I called my nearest one. The lovely person who answered the phone actually went to look and reported back that, indeed, he had smoked mussels on the shelf. When I told him that he was wonderful, he joked, “Wait a sec while I get my wife on the line so you can tell her.” Never mind his wife, I hope his employer appreciates him! 

Smoked Mussel Tapenade

This recipe is adapted from one on Wendi’s AIP Kitchen. Nonpareil capers are the little small ones. If you are using larger capers, you might want to use more than 1 tablespoon because of the space between them as you measure. 

Ingredients
3 1/2 oz or 100g (about 30-32) oil-cured olives (Pits still in are better!)
2 cloves garlic, chopped roughly
1 can (4.02oz or 114g) lightly smoked mussels in extra virgin olive oil
1 tablespoon nonpareil capers
1 tablespoon fresh lemon juice
1 tablespoon finely chopped green onions (just the green part) plus extra for garnish


Method
Pit the olives with an olive pitter or by hitting them with the flat side of a large knife on a cutting board and pulling the pit free. I suggest you count the olives and then count the pits afterwards. You do not want to leave a pit in an olive. 

Drain the olive oil off of the mussels and reserve two tablespoons of it. 

Place the olives, garlic, drained mussels, capers, lemon juice and most of the green onions (reserve a small amount for garnish) in a mini food processor along with the reserved two tablespoons of olive oil from the mussels. 


Process, scraping down the bowl as needed, until you get a chunky spread. 


Remove to a serving bowl or ramekin and garnish with the reserved green onions.

Serve at room temperature on toast. Delicious! This would be a great appetizer with a crisp white wine or chilled beer. We ate it heaped on the toast for lunch! So good. Leftovers were tossed with hot buttered pasta. Divine.

Crispy Green Herb Patties

Today we are “cooking like Vikings,” at the behest of our Sunday FunDay host, Amy of Amy’s Cooking Adventures for Leif Erikson Day, which just happens to be today. 

I’ll be honest, aside from the fact that Leif Erikson was a Viking explorer, I didn’t know much else about him. And I had no idea that there was even a Leif Erikson Day! Turns out that it’s been on the official US calendar since 1964. You can read more about it here: https://www.wincalendar.com/Leif-Erikson-Day And even more about Explorer Erikson on History.com. Thanks to Amy, I am now much better informed!

I found this Viking recipe on a website from the Ribe Viking Center in Ribe, Denmark where archeological excavations have confirmed the presence of Vikings in the past. The original recipe title would translate to green meatballs but the description said that, of course, they were vegetarian so I changed the English name. Calling them green meatballs would just have confused people! And I hope you would agree that plain old “green balls” would have been weird. 

Crispy Green Herb Patties

I’m leaving the ingredients list intact, in case you do indeed have access to nettles, dandelion leaves, bird’s-eye grass, birch leaves and chervil. I don’t but I did find cress, chives and scallions to which I added some parsley and cilantro because they are green herbs and I already had them on hand. How much is a basketful? I have no idea but I leave you this photo of what I used. It’s a bunch of green stuff! 


The original recipe advises: If you do not make the herb patties early in the spring, you should remember to ONLY use the newest, tender shoots.

Ingredients
1 basketful of different, fresh herbs such as nettles, cress, chives, scallions, dandelion leaves, bird's-eye grass, birch leaves and chervil.
1 medium onion (mine weighed 120g)
1 large clove garlic
1 large egg
3/4 cup or 100g coarse wheat flour – I used stoneground wheat 
1/4 cup or 22g oatmeal
1-2 tablespoons milk
1/2 teaspoon fine sea salt
Butter for frying

Optional for garnish: chopped chives

Method
Thoroughly wash the green herbs and discard any tough stems. Spin them in a salad spinner to dry them. If you don’t have a salad spinner, put the herbs in the middle of a towel and bring the sides together securely. Go outside and swing the towel around quickly. Works like a charm. 

Peel and roughly chop your onion and garlic. Put them in a food processor and chop finely. 


Add in the herbs, in two or three groups depending on the size of your processor.
 

Chop finely, occasionally scraping down the sides of the processor with a spatula. 


Measure the flour and oatmeal into a large mixing bowl. Add in the herb mixture and the egg. 


Stir until well combined. 

Add the milk one tablespoon at a time – you might not need it all – mixing well. 


You don’t want it to be too wet or too dry. A spoonful should hold together when you press it into a ball with your clean hands. 


Add the salt and mix well. 

Use a spoon or scoop to divide the mixture into 12-13 portions. Shape them into patties. 


Melt a couple of tablespoons of butter in a skillet. Add the patties, being careful not to crowd the pan. Remember, you will need space to turn the patties over with a spatula. 


You may need to cook them in two batches, adding more butter to the pan for the second batch. 

Cook the patties over a medium heat until they are crispy and golden on both sides. 


Serve warm. Enjoy!

Baked Lobster Roll Dip

This Baked Lobster Roll Dip is a twist on the traditional sandwich, with many of the same ingredients, plus cream cheese, it’s a fabulous appetizer! Serve it with a crusty loaf or slices of baguette. Frankly, it would be a great filling for a baked potato as well.

When our Fish Friday Foodies host for this month event decided on Lobster Rolls as our theme, I was excited because here on the island of Jersey, the lobsters are lovely and freshly caught but I didn’t feel like making a plain sandwich on a bread roll. 

It occurred to me that I could take the lobster roll ingredients perhaps and serve it as a dip instead, like lobster salad. A quick google search revealed that many people had already had that idea, thousands of them in fact. Many were served cold but I was most intrigued by the baked ones, which had a variety of cheese from gruyere or cheddar to Parmesan and cream cheese. 

I could just picture the bubbling dish, hot and melty from the oven! Irresistible! And so it is. 

Baked Lobster Roll Dip

This recipe is adapted from one shared by the Lobster Council of Canada. 
lobstercouncilcanada.ca/recipes/lobster-roll-dip If you are curious about Canadian lobsters, I highly recommend a visit to their site. My cooked lobster was almost 1.1 pound or 500g which yielded 8 oz or 225g of meat from the tail and claws. 

Ingredients
8 oz or 225g plain cream cheese, softened
1/2 cup or 120ml mayonnaise
1/3 cup or 80ml sour cream
8 oz or 225g cooked lobster meat
1 rib celery, finely chop
1/4 medium purple onion (about 40g), finely minced
1 green onion - just the green part
2 tablespoons or 20g drained capers
3 tablespoons or 45ml freshly squeezed lemon juice
1 tablespoon Dijon mustard
1 teaspoon cayenne pepper
1 teaspoon Old Bay seasoning
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper

To serve:
Baguette, sliced in circles, toasted or untoasted, crusty bread or crackers

Method
Preheat your oven to 400°F or 200°C. Finely chop your celery and green onion top. Finely mince the onion. 


In medium bowl, using handheld electric mixer or in the bowl of your stand mixer, beat cream cheese, mayonnaise and sour cream until smooth and blended. 


Add in the celery, capers, onion, green onion, lemon juice, mustard, cayenne pepper, Old Bay seasoning, salt and black pepper and beat again until combined. 


Chop your lobster meat into small chunks. 


Fold in the lobster into the mixture.


Spread the dip in a baking dish and give the top an extra sprinkle of cayenne, if desired.


Bake for 25 to 30 minutes, until it’s bubbling and hot! Serve with your choice of bread or crackers.

Creamy Avocado Yogurt Dip

The other night we were invited to a get-together of my oldest friends, by which I mean, to clarify, the group of friends I’ve been friends with the longest. We are all about the same age. Many of us have been friends since we were nine years old, others joined the gang later and some met even earlier in first grade. 

I wanted to contribute to the evening’s festivities so I made this dip and also baked a tropical Bundt cake. (Stay tuned for that recipe this Thursday.)

As we usually do, we told stories on each other and laughed so hard! It was one of the best nights we’ve enjoyed in a VERY long time. To my delight, this dip was a hit! I have to agree. It is GOOD. And so easy!

Creamy Avocado Yogurt Dip

This dip can be made earlier in the day you want to serve it but do cover the surface snugly with cling film so air can’t touch the top and refrigerate, if not serving immediately. I have no idea if that old wives' tale is true but I also saved the avocado pits and tucked them in there too.

Ingredients
1/2 cup or 122g Greek yogurt
2 fresh, just ripe avocados 
1 clove garlic
1 small fresh jalapeño
small bunch cilantro (see photo for guide, let's not get too hung up on size/weight here)
1 teaspoon cumin
1/4 teaspoon fine sea salt
Juice from half a lime (about 1 1/2 tablespoons)

Method
Smash and mince the garlic. Remove the stem and finely chop the jalapeño. You can remove the seeds if you don’t like things too spicy. I leave mine in. Remove the tough stems and roughly chop your cilantro.


Into the vessel of your food processor, add the yogurt.  Cut the avocados in half and remove the pits. Use a spoon to scoop the avocados into the food processor.


Add in the garlic, jalapeño, cilantro, cumin, salt and lime juice.


Whiz until smooth.

Enjoy with crudités or chips. We NEEDED potato chips that night. Don't judge. It's NOT guacamole, but this would also be good with tortilla chips. I bought black pepper and salt chips and they were awesome.

Baked Crawfish Rangoon

These baked crawfish Rangoon are not just pretty to look at; they are tasty too with a garlicky, spicy cream cheese crawfish filling and crunchy baked outsides.

Here’s the recipe I promised you in last month’s Muffin Monday post, made with leftover boiled crawfish that we cooked and peeled ourselves. You can substitute frozen crawfish or even chilled cooked shrimp if you can’t get those. 

These little guys are super tasty with or without the dipping sauce but the sauce does add a welcome extra hit of chili pepper to spice them up. 

Baked Crawfish Rangoon

The final step of prep before baking is a spritz of oil to help the rangoon brown in the oven. You can use baking spray but I prefer a mister of just oil, if you have one. This recipe makes 3/4 cup or 180ml dipping sauce and about 40 rangoon. These can be made a day ahead and chilled until you are ready bake and serve. They are best served freshly baked for utmost crispiness. 

Tip: If you do happen to have leftover rangoon after they are already baked, simmer them in a little stock or broth for a delicious light soup.

Ingredients 
For the crawfish rangoon:
1 (8 oz or 226g) package cream cheese, at room temperature
2 cloves garlic
2 green onions
1 red chili pepper (optional)
1 tablespoon low-sodium soy sauce
1 egg, divided
7 oz or 200g cooked crawfish
40 wonton wrappers
Oil spray

For the sweet chili dipping sauce:
1/2 cup or 120ml plus 1 tablespoon water, divided
1 tablespoon cornstarch
2 medium cloves garlic, minced 
3 red chili peppers, minced
1/3 cup or 66g sugar
3 tablespoons rice vinegar
1/2 teaspoon fine sea salt

Method
Preheat oven to 350°F or 180°C. Line a large baking pan with a silicone liner or baking parchment. 

Whisk the egg white with a teaspoon of water in a small bowl. 


Finely mince the garlic cloves, green onions and red chili pepper, if using. 


In a medium bowl, stir together the cream cheese, garlic, green onions, soy sauce and egg yolk. 


Chop the crawfish roughly. Fold them into the cream cheese mixture. 


Arrange the wonton wrappers on your work surface then spoon 2 teaspoons of the crawfish mixture (about 14g) into the center of each wrapper.

Dip your finger or a pastry brush in the beaten egg white and run it around the edges of each wonton wrapper. Fold each of the corners up and toward the center of each wonton wrapper, pinching to seal each edge and top shut.


Arrange the crawfish rangoon in a single layer on the baking sheet, spacing them 1 inch apart. 


Spritz the rangoon with oil spray. (This is optional but will help enhance the golden brown color and crispiness.)

Bake the rangoon until they are golden brown and crispy, 15 to 18 minutes. I managed to fit 24 in one pan so I baked the second batch of 16 when those were done. 


While they bake, make the dipping sauce. In a small bowl, whisk together 1 tablespoon water and cornstarch. Set aside.

In a small pot, mix together the remaining 1/2 cup or 120ml water, garlic, peppers, sugar, vinegar and salt. Bring to a boil over medium heat, reduce heat and simmer for 3 to 5 minutes.


Stir cornstarch mixture to re-combine, then whisk into simmering sauce and cook until thickened, about 1 minute more. Remove from heat, let cool, and use immediately or store in an airtight container in the refrigerator.


Remove the rangoon from the oven and serve them with the dipping sauce.
