Salted Caramel Pumpkin Blondies

Some of you may have noticed that my recipes are a haphazard combination of measures. Sometimes by weight in grams or ounces, equally often cups and milliliters and other volume measures. My problem is that I have moved all over the world collecting cookbooks (and recipes from friends!) so I have gotten quite comfortable mixing and matching. I own two sets of measuring cups, US and UK, where a cup varies from eight ounces in the former to nine ounces in the latter. I don’t actually own a separate set of measuring spoons, but I know that an Australian recipe calling for a tablespoon of something needs four teaspoons instead of the US three. Thank goodness all teaspoons are 5ml!

I have a wonderful set of vintage scales, a gift from my mother, procured by a dear friend in Aberdeen, which has both imperial and metric weights. This is my very favorite thing in my kitchen and until I bought a digital scale, and I used it all the time.



When using my US cookbooks, I often measure things out, then tip them in the digital scale and write the weight in pencil in the cookbook, so I can just weigh the item the next time I use the recipe. How we ever started using cups, I do not know, because weighing is so much easier - and more accurate!

If you too find yourself with a foreign recipe, online or in a cookbook, check out Traditional Oven, the website I often use for conversions. It has been a godsend! But whichever measure you use, you'll want to make my salted caramel pumpkin blondies.

Salted Caramel Pumpkin Blondies


To give everybody credit: My recipe was adapted from this recipe from BakedBree.com which was in turn adapted from this recipe from SingForYourSupperBlog.com which was in turn adapted from a recipe for basic pumpkin blondies from Annies Eats, who adapted hers from Martha Stewart. And so it goes.

Ingredients
2 cups or 250g plain flour
1 teaspoon cinnamon
1/2 teaspoon freshly grated or ground nutmeg
1 teaspoon baking soda
1 teaspoon salt
1 cup (245g) room temperature butter
1 1/4 cups or 250g brown sugar
1 egg
2 teaspoons vanilla extract (Check out the link if you'd like to make your own.)
1 can (15 oz.) pumpkin (not pie filling)
1 cup store-bought caramel syrup with 1/2 teaspoon of sea salt added or this lovely recipe. I made this myself and ended up with a much darker caramel sauce.

Method
Preheat your oven to 350°F or 180°C. Combine all dry ingredients: flour, cinnamon, nutmeg, baking soda and salt in a large bowl.





Cream together the butter and brown sugar until very light and fluffy in another bowl.


Add the egg and vanilla extract to the butter and sugar.







Now beat in the canned pumpkin.


Finally, fold in the reserved flour mixture a few spoons at a time, and stop stirring when the batter is just combined. This is going to be really thick.


Line a 9×9 baking pan with parchment paper and spread half the batter around evenly.


Bake in your preheated oven for 10 minutes. Remove from the oven and pour the caramel sauce over the partially baked batter.


Carefully spoon the remaining batter over the caramel.


Spread to cover, as best you can. A gentle touch is key.

Return the blondies to the oven and bake for another 30 minutes. A toothpick should come out clean. Let the blondies cool before cutting.

Sprinkle with powdered sugar or drizzle on more salted caramel sauce before serving.

Roasted Onions with Rosemary

There is something about the application of heat on onions that sweetens them as they roast, drizzled with olive oil, sprinkled with sea salt, freshly ground black pepper and rosemary. Simple, but delicious. 

Onions are vegetables so why is it we so often use them as a flavoring for less well-endowed dishes, instead of giving them their rightful place as the star in a side dish? It’s a question I’ve been asking myself for more than 14 years, which was the first time I made this Jamie Oliver recipe for cheesy stuffed onions with bacon. The main reason that many years ago was because my young daughters, still living at home, were not fans of cooked onions, although they both enjoyed them raw in salads. Perhaps your family is the same. Their father and I, on the other hand, love onions any way you’d like to prepare them but are particularly enamored when they are roasted.

A few years ago, when we were still living in Cairo, a friend was giving a dinner party and I was roped in to help. He would handle the starters and main course and I would bring the sides and desserts. One of the things I made was a huge pan of roasted onions that had been drizzled with olive oil and sprinkled with herbs. As they roast, the onion layers separate, some pieces breaking off entirely and becoming extra crispy in the heat of the oven, others softening sweetly into tenderness. I could have eaten the whole lot before it ever made it out of the kitchen.

We’ve been eulogizing those roasted onions for more than three years now. Last night I finally got around to making them again. I served them alongside some roasted chicken and they were sheer perfection. Just as good as we remembered. Which is somewhat of a relief.

Ingredients
2.2 lbs or 1kg small purple onions (Some people call them red onions but they sure look purple to me.)
3-4 sprigs fresh rosemary or your favorite fresh herb, plus extra for garnish
Olive oil
Sea salt
Freshly ground black pepper

Method
Preheat your oven to 375°F or 190°C. Peel your onions and cut the smaller ones in half. Cut larger ones in three or four pieces.

Set them cut side up on a large baking tray. Sprinkle with sea salt and freshly ground black pepper.

Pull the leaves off of the rosemary and sprinkle them on the onions as well.



Drizzle everything generously with extra virgin olive oil.



Pop the pan in your preheated oven and set the timer for 30 minutes.

When the timer goes off, have a look at the onions. If the edges are just beginning to turn brown, leave them another 15 minutes on that side.



When that time is up, take the pan out of the oven and give the onions a gentle stir. Some of the outer layers of the onions will come loose, but that’s okay.

Put the pan back in the oven for another 15-25 minutes, checking periodically so that the onions don’t burn. You want them very dark in some places, crispy in others but still with some soft insides showing.



Remove them from the oven and taste for seasonings. Add more salt and pepper, if needed.

Sprinkle with a little more chopped rosemary, if desired.

Seared Spice-encrusted Tuna Steaks


There’s just something about Sunday Brunch that’s special.  The dressing up, the champagne, the extravagant variety of choices, and most especially, the occasion.   Because if you are going to Sunday Brunch, there is probably a reason.  Even if it is just to celebrate summer!  When we were living in Kuala Lumpur, one of our favorite brunches was at the Westin hotel.  Along with the generous buffet where we could help ourselves, the wait staff also delivered delicious morsels to our table, all afternoon.  Plus Champagne.

One such morsel was tuna, coated in spices and seared till it was golden on the outside but still vibrantly pink on the inside.  The last time we were there, I examined it closely, tasting bite after bite, purely for research, you understand. And this is my best approximation of that lovely dish.  You can serve it alone, tapas style, in which case, drizzle it with some good olive oil in the serving dish, or on a bed of greens and rice salad on a small plate for a starter, or in a larger bowl for a complete meal. 

Ingredients
2 tuna steaks – about 9 oz or 255g each

For the spice mix
1 teaspoon cumin
1 teaspoon brown mustard seeds
1 teaspoon fennel
1 teaspoon coriander
1 teaspoon sea salt
1/2 teaspoon mixed peppercorns
1/2 teaspoon crushed red pepper

For the wet coating
2 tablespoons whole grain mustard
2 tablespoons olive oil – plus more for the frying pan

Method
Lay your tuna steaks out between paper towels to dry.


Use a mortar and pestle to grind the spices finely.

The pink is Himalayan sea salt.  Use any sea salt you have. 


Mix the whole grain mustard thoroughly with the olive oil.



Spread half of the mustard mixture on one side of the tuna steaks and then sprinkle with half of the spice mix.



Put the tuna on a piece of cling film, which will make it easier for you to flip it over into the frying pan.  Repeat the seasoning on the other side, first mustard, then spices.


Heat a non-stick frying pan until it is very hot and then drizzle in a little olive oil.  Cook one side of the tuna for just a couple of minutes before turning it to the other side.


Watch the side of the tuna and you can see the cooked part coming up.  You want to leave a good amount of pink still in the middle.

Sear the other side for just a minute or two and then remove from the pan and allow to rest for a few minutes.



Slice into thin pieces with a serrated knife, using a sawing motion so you don't mash the tuna.

Hasselback Potatoes


I don’t know about you but I get bored of the same old potato, rice and pasta side dishes.  Years ago I was watching a Nigella Lawson show and she made these lovely potatoes, describing their incomplete slices as just a way of getting more fat inside.  As a huge roast potato fan, this thrilled me.  Best of all, this recipe is pretty and easily multiplied to feed any army, limited only by the size of your largest roasting pan and oven.

Ingredients
6 medium waxy young potatoes (with thin peels)
Knob of butter
Healthy drizzle of olive oil
Good sprinkle of sea salt
Small handful chopped parsley for serving - optional

Method
Preheat your oven to 400°F or 200°C.

Set your potatoes, one at a time in a wooden spoon.  Using a sharp knife, cut even slices about 1/4 inch or 1/2 cm apart, from the top of the potato, width-wise, until your knife reaches the wooden spoon.



Set the potatoes, cut side down in a baking pan that has been drizzled with olive oil.  Put the knob of butter in the pan and put the pan in the preheated oven.



Roast for about 20-25 minutes, turning the potatoes from top to bottom and basting frequently with the olive oil/butter in the bottom of the pan.



Finally turn the potatoes cut side up and give them a good sprinkle of sea salt.



Continue basting frequently with the olive oil/butter.

Roast another 20-25 minutes or until the slices have separated and the potatoes are golden and crunchy around the edges.




Baste one final time and serve.

I meant to sprinkle these with chopped parsley.  Imagine them even prettier with a little green on top.

Golden Vanilla Bean Caramels



This is the chocolate that started me off.   



Almost two months ago I had the good fortune to be invited to Geneva to take part in a meeting of company spouses.  We were also treated to some lovely meals and excursions, one of which was the Cailler chocolate factory in Gruyère.    I’ve traveled all over the world, but somehow I had never come across chocolate with caramel and SALT. Ordinarily not a sweet lover, I ate the whole bar, square by square, nibble by nibble until it was completely gone. Then I mourned. Just as well, you say, and you are correct, but that new taste sensation has stayed at the back of my mind now for weeks.
Yesterday, I came across a recipe online, originally from Pure Dessert by Alice Medrich and I knew I had to try it.

Golden Vanilla Bean Caramels

Ingredients
1 cup Lyle’s Golden Syrup
2 cups sugar (I used only 1 3/4 cups)
3/8 teaspoon fine sea salt (I used a 1/2 teaspoon since I was trying to approximate my Swiss experience, which was definitely salty.)
2 cups heavy cream
1 1/2 teaspoons pure ground vanilla beans, purchased or ground in a coffee or spice grinders, or 1 tablespoon plus 1 teaspoon pure vanilla extract (I scraped the seeds out of one fresh bean then threw the whole pod in while heating the cream, taking it out before adding the cream to the sugar mixture as required.)
3 tablespoons unsalted butter, cut into chunks, softened

Equipment
A 9-inch square baking pan
Candy thermometer

Line the bottom and sides of the baking pan with aluminum foil and grease the foil. (Really grease it well or even the foil will stick to this caramel! Mine did in places so clearly my greasing wasn’t thick enough everywhere.) Combine the golden syrup, sugar, and salt in a heavy 3-quart saucepan and cook over medium heat, stirring with a silicone spatula or wooden spoon, until the mixture begins to simmer around the edges. Wash the sugar and syrup from the sides of the pan with a pastry brush dipped in water. Cover and cook for about 3 minutes. (Meanwhile, rinse the spatula or spoon before using it again later.) Uncover the pan and wash down the sides once more. Attach the candy thermometer to the pan, without letting it touch the bottom of the pan, and cook, uncovered (without stirring) until the mixture reaches 305°F. 


Meanwhile, combine the cream and ground vanilla beans (not the extract) in a small saucepan and heat until tiny bubbles form around the edges of the pan. Turn off the heat and cover the pan to keep the cream hot.

When the sugar mixture reaches 305°F, turn off the heat and stir in the butter chunks. Gradually stir in the hot cream; it will bubble up and steam dramatically, so be careful. 


Turn the burner back on and adjust it so that the mixture boils energetically but not violently  Stir until any thickened syrup at the bottom of the pan is dissolved and the mixture is smooth. Continue to cook, stirring occasionally, to about 245°F. (This part seemed to take forever. I had my fire rather low because I didn’t want the mixture to burn but it didn’t seem to go above 225 °F for the LONGEST time, so I raised the flame and the temperature finally began to climb.) Then cook, stirring constantly, to 260°F for soft, chewy caramels or 265°F; for firmer chewy caramels. (Took mine out at 260°F and they are soft and chewy and are a danger to dental fillings for sure!)

Remove the pan from the heat and stir in the vanilla extract, if using it. (I skipped this step since the whole pot was filled with little bitty vanilla seeds and that seemed like enough vanilla.) Pour the caramel into the lined pan. Let set for four to five hours, or overnight until firm.

Lift the pan liner from the pan and invert the sheet of caramel onto a sheet of parchment paper. Peel off the liner. Cut the caramels with an oiled knife. (This DID NOT work very well for me. My well-oiled knife still stuck to the caramels. My kitchen scissors were much more effective in cutting the caramel into squares.) 

Wrap each caramel individually in wax paper or cellophane.  (I used cling film, cutting off a wide strip and lining the squares up in the middle with an inch or two in between each one. I folded the cling film over from the top and then the bottom, pressing a finger down between each caramel. Then I cut the cling film where I had pressed my finger, to separate them.)

  
These caramels are delicious. If I would do anything different next time, it would be to add even more salt flakes to the top. I mashed a lot of them off as I was trying to separate the caramels into squares.
